It’s been over a one month since my first post about being pregnant and working as a Flight Attendant so I thought it would be a good time to give an update on what’s been going on.
I am now 30 weeks pregnant and am now on state disability due to the coronavirus, COVID-19 outbreak. My doctor no longer finds it safe for me to be flying with the unknown of the effects on pregnant women on their unborn child(ren).
With that being said, I’m grateful to be home but with “shelter-in-place” I’m starting to go stir crazy in our one bedroom apartment. I didn’t realize how often I go outside with my little one. I have can’t leave the house because it’s not worth the risk but at the same time I’m desperate for some fresh air. But I’m thankful for mine and my family’s health and I hope this crazy pandemic ends soon for everyone.
The aviation industry is particularly struggling with this COVID-19 virus. Most airlines are operating at the bare minimum and some are even furloughing their flight attendants due to closing bases because they can’t afford to keep their employees. I selfishly feel safe at the current moment only because I’m on state disability but what’s going to happen when I return from my leave? Everything is so uncertain at this time. All we can do is stick together and do what we can to keep our jobs as essential workers.

These are seriously the best chocolate chip cookies I’ve ever tasted! My husband is lactose intolerant so whenever I get cravings for baked goods I look for vegan options.
I didn’t have vegan chocolate chips so regular semi sweet chocolate chips were used.
I got this recipe from Baker by Nature and I’m so glad I stumbled upon it. It’s made with coconut oil, coconut milk, and applesauce! So for those who aren’t lactose intolerant and just looking for a healthier alternative these are perfect for you!
Now real bakers I’m sure mix the wet ingredients and then add the dry ingredients but I’m lazy and I just toss everything into my mixer.
Once all the ingredients are mixed, I put parchment paper onto a cookie sheet and scoop about 1 tablespoon of dough roughly 1/2-1 inch apart. These cookies mostly rise so it’s okay to have them a little closer together.
Place in the oven at 375 for 9-10 minutes and then place on a cooling rack.
Then there you have it! Healthy (mostly) vegan chocolate chip cookies! Hope you enjoy them as much as my family did!
With shelter in place put in effect, I’m trying to keep busy (and sane) and decided to make a baby boy onesie for my new arrival coming June 2020.
I had a minor messed up with the peeling process after ironing on the design but since it’s for my own child I don’t mind the mess up. If it were a gift I would’ve made another one.
“Hi I’m Caleb” for our new little boy was made using the following:
1. Silhouette Cameo 3
2. Cricut Iron-on vinyl in black
Carter’s baby onesie in white
Just choose your favorite font and center the design so it’s even.
Flip your design so it’s reverse. This is for the cutting machine. Don’t forget to do this or it won’t iron on properly to the material.
Cut the design and iron on! That’s it! Super easy 5-10 minute craft and a personalized baby onesie for your little one.
Side Note: there was a minor issue with the “A” in Caleb because I tried peeling the clear plastic off of the vinyl when it was too hot. So please make sure to let it cool before trying to peel.
